Mango Mastani

Hi friends,

Today I have an extremely easy drink recipe for you. Its the mango season and this recipe lets you rejoice the king of fruits..

Ingredients 

Mango pulp - 2 mangoes
Water 1 glass
Honey to taste ( if needed)
Fresh cream
Ice cream (optional)

Method

Pour the mango pulp and water in a mixer and mix well. It will be a thick liquid. If needed add honey for sweetening. Pour the mixture in glass with alternate layers of fresh cream. Add a scoop of ice cream and refrigerate.

Steamed Chicken With Stir Fried Veggies

Hi friends,

For those of you who want to go low on carbs..this is a recipe which is filing as well as healthy
Ingredients

Chicken - 2 fillets
Garlic paste - 1 tsp
Onion paste - 1 tsp
Slit chilies - 2 to 3
Cherry tomatoes - 10 approx.
Beans chopped - 2 tbsp
Broccoli chopped - half cup
Butter - 1 tsp
Oil -1 tbsp
Chopped garlic - 1 and 1/2 tsp
Chopped onions - 2 tbsp
Chopped tomatoes - 1 tbsp
Mushroom - 8 to 10 pcs
Red bell pepper - 1 tbsp chopped
Yellow bell pepper - 1 tbsp chopped
Oregano - 1/2 tsp
Soya sauce - 1/3 tsp
Tomato sauce - 2 to 2 and 1/2 tbsp
Sal to taste


Method

Marinate chicken fillet with garlic paste, onion paste, slit chilies and salt.
Steam the whole mixture.

Take cherry tomatoes, beans and broccoli and boil for 5 minutes. then transfer it to ice cold water (this will preserve their colour).
Strain the boiled vegetables.
De-skin the tomatoes.

In a wok, add little butter and white oil (this prevents butter from burning)
Add chopped garlic and saute, add onions, chopped tomatoes. Saute a little and add mushroom, red and yellow pepper, boiled vegetables, oregano, salt, soya sauce and tomato sauce. (You can also use stir fry sauce if you want). Stir fry the whole mixture. I also added cubes of cottage cheese and a whole baby corn.
Toss well and cook on low flame.

Place the chicken fillet cut in circles, in the serving bowl. Pour the stir fried vegetables in.

Virgin Mojito

Good evening friends,

Here is a healthy cool summer drink I am sharing with you today.. Virgin Mojito

Ingredients
Small lemon pieces - 2 to 4
Mint - 6 leaves
Soda or sprite
Fresh lemon juice - 2 tbsp
Honey - 1 tbsp
Ice cubes

Method
Muddle the lemon pieces along with mint leaves in a glass.
Squeeze in the lemon juice.
Add honey. (If using sprite, lessen the quantity of honey)
Put some ice cubes in the glass.
Add soda or sprite.
Stir and serve.

For a cocktail Mojito, use only soda and add 3 tbsp of White Rum.
For a calorie-conscious Mojito, add cold water instead of soda or sprite.

Indo-Thai soup

Good evening friends,

Today I am sharing the recipe of a soup I made recently

Ingredients 
Water - 5 cups (approx. 600 ml)
Lemon grass (chopped) - 1 tsp
Finely chopped Garlic - 1 and 1/2 tsp
Chopped Chillies - 1 tsp
Soya sauce - 1/2 tsp
Fish sauce - 1 tsp
Mushroom (chopped) - 1 tbsp
Carrots (chopped) - 1 tbsp
Yellow bell-pepper (chopped) - 1 tbsp
Noodles - 10 to 12 strands
Beans (chopped) -1 tbsp
Baby corn (chopped) - 2 pcs
Raw mango - 2 tsp
Chive - 2 tsp
Mint - 5 leaves
Basil - 5 leaves
Salt - to taste
Cornflour - 2 tsp heaped

Method 
In a saucepan, pour water.
Turn on the heat and add lemon grass, garlic,chilies. Bring it to boil.
Add soya sauce, fish sauce.
Mix well.
Add the vegetables,noodles and mushroom and cook on low heat. Add salt.
Let them boil.
Mix cornflour with little water in a bowl to make a liquid.
When the vegetables are cooked, add the cornflour mixture to thicken the soup.
Put off the fire when done. Garnish with finely chopped raw mango, mint and basil.

Home Made Cleansing Milk

Hi Friends,

Hope you are managing the heat well. I sometimes feel...one day I am going to melt if the weather continues like this. My make up is reduced to minimal...almost nil.
While i was going through the photos of my Kerala trip, I encountered some photos that i had clicked for blogging. I misplaced my cleansing milk and tried out making one, to clean my face.
It requires handful ingredients and did prove to be effective for me. Hope you like it too!

Ingredients
Milk powder - 1 small sachet
Moisturizer/ cream - 1/2 tsp
Water - 1 and 1/2 tsp
Bowl

At first, I put some water in the bowl.
Then add the milk powder and moisturizer. The moisturizer was the one provided by the Hotel. It is thick and slight transparent. Texture is like Vaseline.


Mix them with a spoon...and ta da...!
Home made cleansing milk is ready.

As I was in a hill station...so had used the moisturizer. But, as I have oily skin, I made sure that it was quite thin and watery. After using this to clean the face, I washed it well with my face wash..

Meat Balls in Southern Spices

I am sharing with you, a recipe which i tried out yesterday. this is an easy to cook recipe and can be made within a short time. Serves 2 - 3

Ingredients

Rice
Meat (chicken/mutton) keema - 2 and 1/2 cups
Onions (chopped) - 1 medium sized
Onions (finely chopped) - 1 small
Mint leaves (chopped) - 1 and half tbsp
Coriander leaves -2 tbsp
Black pepper powder - 1/2 tsp
Cumin powder -1/2 tsp
Coriander seeds - 1 tsp
Curry leaves - 8 to 10
Tomato (de-skinned & chopped) - 1 big
Chana paste - 3 tbsp
Carrot (Chopped) - 1 medium to big size
Chopped chilies - 1 tsp
Corn flour for binding
Salt to taste
Oil for frying
Water


Method

Grind the rice into a thick paste (like the one used for making petha). Add salt and make small balls. I made 6 balls. Now boil the rice balls in water.

Take the keema and add onion, mint leaves, coriander leaves, black pepper powder, cumin powder, salt, chopped chilies, Mix well.
Add cornflour and mix. Make small balls.
Fry the meat balls in oil.
In a wok, heal oil, add crushed coriander seeds and few curry leaves, then add the chopped onion followed by turmeric, chillies, cumin powder.
Stir and cook.
Add the tomato. Cook till the oil starts leaving the mixture. Add chana paste and mix well. add the rice balls, meat balls and water. Cook it on low flame.

Serve hot.
