Desi Style Stir Fried Veg

Another reason for loving winter is because of the variety of vegetables available at this time. Having vegetables is a very important part of any diet plan. Last night I tried experimenting in the kitchen and landed up with a Desi style stir fried veg which is healthy, low on carbs yet not bland and tasteless. There were not much vegetables in the fridge so I grabbed what ever I could lay my hands on. You can add any vegetable you like.


Ingredients
Capsicum chopped half cup
Raw papaya chopped 1 cup
Carrot 1 medium sized, chopped
Onion 1 small chopped
Garlic chopped 1 tsp
Garlic-red chilli paste - 1 tsp
Salt to taste
Oil 1 1/2 tbsp
Thai seasoning - 1 tsp

Method
First wash and boil the vegetables in a pressure cooker with a pinch of salt.
After boiling, drain the water.
In a pan, heat 1 and a half tsp of white oil.
Add the boiled vegetables and saute a little.
Transfer them from the pan.
In the same pan, add chopped garlic and onion to the left over oil.
Stir on low heat.
When the onions soften, add the sauteed vegetables.
Add a pinch of salt, garlic-red chilli paste and mix well
After a minutes, add the Thai seasoning.


Stir fried veg is ready to be served.
