Most of you might not know, my mom has a small catering business, somewhat similar to the dabbawala system. So, yesterday she had to make 120 bowls of pineapple chutney or 'anarosh-er chutney' as we Bengali's call it. I was helping her in cooking and thought of sharing the recipe with you guys. It took me 2 and a half hours to completely peel and de-eye of 20 pineapples. The recipe given here is according to 1 pineapple.
Ingredients
Pineapple 1 medium sized
Sugar 100 grams
Cashew nut 1 tbsp
Raisins 1 tbsp
Salt a pinch (this might seem odd because its a chutney but I always add it)
Lemon juice 1 tbsp
Method
At first carefully peel and wash the fruit. Then de-eye the pineapple and cut into moderate pieces. Smash the pineapple in a mixer grinder in such a way that small pieces are still left. It should not become a paste. You can also grate it instead.
Now take a dry wok and pour the grated pineapple. If it is slightly watery, pour the water too. Do not drain the water.
Leave it on medium heat and it will start boiling. Stir occasionally.Mix the salt.
When the water has reduced, mix sugar, cashew nuts and raisins. Mix well and cook for about 3 minutes. Then add the lemon juice.
Remove from heat and let it coll to room temperature.
